Roasted Rainbow Veggie Bowl with Homemade Tahini and Dill Sauce
What you will need:
3-4 medium potatoes
1 large sweet potatoes
2 large carrots
1 medium red pepper
1 medium beet
4 medium radishes
Broccoli
Sliced avocado
1 cup cabbage
2 cups chopped kale or collard greens
Hemp seeds
Avocado oil or melted coconut oil
Curry powder
Sea salt
Lemon juice
Sesame seeds
Vegan mayonnaise
Chopped dill
How to prepare:
Preheat oven to 400 degrees F.
Add potatoes, sweet potatoes, carrots, beets, and radishes to one baking sheet.
Drizzle oil over vegetables and season with curry powder and sea salt.
Bake for a total of 20-25 minutes.
Add cabbage, pepper, and broccoli to second baking sheet.
Drizzle oil over vegetables and season with curry powder and sea salt.
Bake for a total of 15-20 minutes.
Add cabbage and kale to baking sheet at the last 5 minutes of baking.
For the homemade tahini dressing, toast sesame seeds on the stovetop in a dry skillet over medium heat and stir them frequently until they are lightly colored (not brown).
Blend the seeds in a food processor or blender until they turn into a crumbly paste.
Add 2 tablespoons of oil and sea salt to the mixture and blend until it turns into a smooth paste.
Taste and adjust to liking.
For the homemade dill sauce, whisk the mayonnaise with the lemon juice and dill in a bowl and season with salt.
Divide and align roasted vegetables in large bowl and garnish with hemp seeds. Drizzle tahini and dill sauce over top or serve on the side.
Spinach and Feta Quiche
What you will need:
Butter
Minced garlic
Milk
Eggs
Shredded sharp cheddar cheese
Salt, pepper, garlic powder, onion powder, paprika
Chopped onion
Chopped spinach
Crumbled feta cheese with dried basil and tomato
Mushrooms
Deep dish pie shell
How to prepare:
Preheat oven to 375 degrees F.
In large skillet, saute onion and minced garlic in butter, then remove from heat.
Stir in cheese, spinach, mushrooms, and feta.
Pour mixture into pie crust.
In bowl, whisk together eggs, milk, and seasonings then pour over spinach mixture and allow to seep through.
Bake for approximately 15 minutes.
Top with cheddar then continue baking 40 minutes until desired crust is achieved.
